What I eat every morning

Why do I eat this every single day?

Well, not only is it delicious!!!

There are endless benefits to the avocado.

  • Keeps you filled
  • Tons of magnesium (helps with anxiety)
  • They contain more fiber and potassium than a banana
  • AND they HELP to boost your mood!

This healthy fat fruit should be a must in your diet.

Writing this I reminder the first time years ago going to the grocery store to shop for an avocado. I bought a really hard one and went home to try and make guacamole. I didn’t know how to cut it. I didn’t know how to buy it. I ended up throwing it out.

After that it would be years before I ever buy them again. But First Watch sold me on their avocado toast. And I was lucky enough to receive their recipe. I simplified mine because of time restraints, but it is still so good. AND if you are trying to save time, too, you can make double or maybe triple up and make this for a few days.

Some days I’ll scramble some eggs whites, some days I’ll add tomatoes, some days I’ll sprinkle goat cheese. There is so much variety with this, but the BASE is the following:

Ingredients 

  • 1 avocado
  • 1 lime
  • 1 slice chopped red onion
  • EVOO
  • Sea Salt

Red pepper (optional)

Directions

  • Mash avocado
  • Add ingredients
  • Mix around
  • Serve on a piece of toast

Enjoy and FEEL so good!

Pro Tip: if you use a few avocados, the ingredients from above AND chop up some fresh cilantro, a fresh jalapeño, this makes for an amazing guacamole dip!
