Kale and Apple Salad

This can be used as a side or add some shrimp or chicken for a full meal.

But let’s be serious. WHO likes Kale?? Besides my best friend who is super healthy and beautiful. However with this salad everyone in my household likes Kale!!

The key to this is massaging the kale. And making the dressing touch each piece!

Dressing

Juice of three lemons

3 Garlic cloves

1/2 c Extra virgin olive oil

Salt and pepper to taste

Salad

4 cups Kale

1 Granny Smith or golden delicious apples chopped

Extra sharp Cheddar cheese or goat cheese

Fresh Parmesan cheese

Sunflower seeds or almonds

Massage the kale for maybe five or ten minutes with EVOO and remove any stems.

Dice the cheese.

Chop the nuts.

Add both to the kale.

Top with Parm.

Add the dressing.

Toss until all of the dressing is mixed in.

Top with salt and pepper.

Option to add more garlic and lemon juice to the dressing.

 

 

 

Best Dressing Salad

THIS truly blew my mind. Not only was it super quick and easy to make, it was so good.

I’ll give you recipe for dressing then the salad:

• 3/4 cup of flax seed oil

• 1/4 cup of coconut oil

• 1/2 cup of balsamic vinegar

• 1/2 cup of apple cider vinegar

• 6 tablespoons turmeric

• 1 table spoon basil

• Two teaspoons unrefined sea salt

• Two teaspoons fresh ground pepper

• Two tablespoons Dijon mustard

Do it all to taste if you want, but stay heavy on the turmeric; it’s very good for you, and it’s the most important ingredient to this recipe.

This salad dressing will have even the pickiest kids eating vegetables. It’s very versatile. Use it as a dip, a marinade, or whatever. It’s amazing.

 

Salad (you can really put any vegetables you like)

Chopped Kale

Spinach

Ditalini noodles (cooked al dente)

Organic raisins

Carrots

Granny Smith Apple (chopped)

Shredded carrots

Parm cheese

Red pepper

Red onion

Avocado

Shrimp

Old bay

  • Wash the spinach and kale. Massage with 1/4 c EVOO. Sprinkle with salt and pepper.
  • Cook noodles to al dente
  • Shrimp can be cooking on the side in garlic and EVOO. Sprinkle with old bay for additional flavor.
  • Add ingredients one by one
  • Add dressing and toss continuously

 

 

We can’t wait to have this again! And my husband is so funny he’s like I don’t even like things in there but I loved it! Yay homerun!!
