Some of y’all were asking about some of the things I cook at home so I wanted to share a few meals.
I go to the grocery store once a week (typically Trader Joe’s). For the two of us I spend around $120-150 and that lasts us 6-7 days, all meals.
Breakfast is pretty routine.
I make one of two:
1. smoked salmon sandwich with over easy egg, piece of smoked salmon, slice of red onion, sprinkle of goat cheese
2. avocado smash on a piece of toast with goat cheese
3. two slices of bacon
For lunch it’s very basic:
1. yogurt parfait with 100% Greek yogurt, some kind of berry like raspberries, sprinkle of granola, honey and chia seeds or any kind of seeds, hemp
2. Shake. I’ll link the little ninja that I use and love. This is so easy for on the go or making in the morning and bringing with you. I use
Coconut milk
1 scoop pea protein
1 tbps peanut butter
1 banana
Little honey
3. Bowl of cereal w berries
4. PB & J
For dinner we eat more meals.
1. Sweet potato tacos or turkey tacos
Bake the sweet potatoes or brown the meat
Refríed beans low fat
Pico de gallo or tomatoes
Jalapeño, red onion, salsa verde
Any veggies you want
Goat cheese
2. Pork Loin
They come seasoned and are so easy to make. You literally put it in a pan and bake it. That’s it
Side of cauliflower potatoes (frozen section)
3. Frozen gnocchi
You can add shrimp (I use the frozen ones and just dethaw them as I go)
Side of broccoli, drizzle w evoo, sea salt and lemon or lime
4. Homemade pizza
Marinara, Pepperoni, jalapeño, fresh garlic, fresh basil, parm cheese, diary free cheese or a mozzarella, drizzle evoo
5. Soups
Any kind of rice. I use a Trader Joe’s chimichurri it’s frozen and so easy to heat up. I have used the black bean soup and the red pepper soup and heat it up and pour it over. Oyster crackers if you like a crunch! For lighter you can take our the rice and just use the soup.
6. Flatbread
This is one of my fav’s!
I use a Naan flatbread. Heat it up on the stove w evoo. Let it get a little hard.
Blend (in the ninja or a processor)
1 avocado
Salsa verde
Garlic
Red onion
Jalapeño
Lime
This will make a base sauce for you
Add any other toppings.
Tomato/pico de gallo
Light sour cream
Goat cheese
Any kind of meat / shrimp / pepperonis
7. Brown sugar salmón
In a small bowl whisk together the olive oil, brown sugar, soy sauce, garlic, lemon juice, salt, and pepper. Pour the glaze over the salmon. Top the salmon with aluminum foil and seal. Bake at 350 for 20-25 minutes or until salmon is cooked throughout. Take the foil off of the top and baste the salmon with the sauce in the foil. Broil for 3-5 minutes or until brown and caramelized. Garnish with lemon slices and chopped parsley if desired.
Side veggie or sweet potato with cinnamon.
8. Eye of the round roast
Potatoes
Carrots
Onions
A packet of crock pot roast season
Dump it all in sit on low 8 hours or high 4 hours
